From the time of Caprica till Battlestar Galactica (58 years later), the Adama family line still continues - but what happened to the Graystones? Was Zoe the last of that line?

No one knows since it has never been mentioned or in any official canon. In "Blood & Chrome" there is a reference to Greystone Industries so the assumption is that the company and at least some of the family was still around. My educated guess is that both Daniel and Amanda Greystone were long dead before the events of the BSG miniseries since that took place 58 years after the events of Caprica. You figure that both Amanda and Daniel were already in their late 40's during the events of the Caprica pilot.
shareI've been assuming that Daniel is the real life counterpart of the "Daniel" cylon model that was boxed. I could be wrong about that, though. I'm only about halfway through Caprica right now.
shareIt's unstated, of course. But with Amanda being emotionally unstable and Daniel living on the financial and political edge, it's possible they meet their end before their natural lifespans would occur. Unless the new "skin" Zoe can reproduce, that would be the end of the line, so to speak.
I think it's safe to assume that they all died during the Cylon attacks.
shareThe Graystones were obviously targeted by the Cylons just before or during the First War, you have to remember that Cylons are obsessed with wiping out their creators when given the chance.
