The flashback scene of eating the chicken...? What?! (SPOILERS)

Okay, so the flashback scene when Elliot is at the dinner table (presumably as a guest) and is served the chick and told by his host that it is 'consumed whole, bones and all' - or something along those lines. Then the guests are instructed to eat under cloths in order to hide their faces from God, we see a woman (Elliot's wife?) look appalled but he says something like 'sounds exquisite.'

What was the point of this scene? Was this to show how much he enjoyed his sense of taste? Because surely he could have just eaten a fillet steak or something, or was it to gross out the audience?

Be me, for a little while.

I think the scene was intended to show how his senses allowed him to indulge in a very rare dish made from a baby bird. I think most of the cut scenes were meant to show how he relied on his senses to benefit himself even at someone/something elses expense.

The bird wasn't just killed for food, it was tortured to death for the pleasure of others. Noe the same thing was happening to Elliot. And like his captors, Elliot was able to supress hi empathy for the bird in order to make a profit.
