I've always wondered that too. They were basically at the wedding so it's not like they were going to save money not having a wedding to travel. Why not just get married since they were at the alter.

Remember her fiance, Skye, wanted a simple Greek wedding, so I imagined that's why they sailed-off together at the end for such a wedding.

I always got a creepy feeling off of Skye, I figured calling off the wedding was the best thing because that way they actually have TIME to figure out if it's what they want to do and that being together is best for both of them, and if not, they won't have to go through divorce to get free of each other.

The whole film is a sort of coming-of-age story for Sophie (thought she really doesn't change much in the duration of the film...). She realizes that she doesn't need to keep tabs on everything and can focus on herself, in the advent of the debacle with the three dads. Also, knowing Skye is hesitant both about the big white wedding and the settling down on the island, she decides to live her own life instead of Donna's.
