He may be a great chef but he doesn't know poop about knife sharpening


On a few shows he showed people how to sharpen a knife with a steel rod. That is not sharpening, it is know as steeling the blade. It is done to dress up the blade and refresh the edge but the knife needs to be sharpened with an oil stone, or a wet stone (water) before it can be steeled. It is anoying to see someone that calls himself an expert but doesn't know how to sharpen a knife.

did you ever think that he sharpens all the knives before they start prep work in the morning? then all he would need to do in the evening is use the rod to hone the blade.

do you really think that 'HE' does that. all the knives in professional kitchens have a service do the sharpening or the kitchen drones do it.

when he does hone the blade, he does it in the wrong direction. you do it away from you not toward you.

In all the years I spent working in a slaughter/packing house, I never once saw anyone steel their knives away from themselves.

I find it rather ironic that you bash Ramsay and yet you, yourself don't know the proper term. It is a whetstone. Not a wet stone.
