Why was he quite and didnt move pretty much through the whole movie?

Lol thats cause he just got away from all the those nasty experiments. Zack was alright though because he was a 1st Class SOLDIER and could handle it.

actully its because hojo, experimented on zack and cloud and zack was the failed experiment, cloud had his mind warped by the mako infusion and thats why when zack dies cloud thinks he is zack.

Not to mention Cloud also had a massive sword thrust through his body way earlier which would make anyone like that.

He did nothing notable in Nibelheim because he was keeping a low profile so Tifa wouldn't discover that it was him, and that he didn't make SOLDIER 1st class.

Then during the fight with Sephiroth he's stabbed, then he's experimented on for 5 years with Jenova cells and Mako. He get's Mako poisoning making him get his memory loss that is dealt with during the game.
