If you can’t do it right, consider not doing it at all. The MCU decided to do away with some established comic book expectations already. As an example, they rewrote Star Lord’s origin story. If you can’t do Galactus, just… do something else. The Fantastic Four had a lot of other villains. Use Ego, Molecule Man, or (obviously) DOOM!

Make him a towering, vaguely shaped human. I have no idea how this will look, but it is certainly doable. They would have to be careful to keep him properly proportioned compared to the landscape. They already represented Dormamu and did a passable job:

Make him a person. After all, one of the more recent understandings of Galactus is that the species that sees him can only see a being that looks vaguely like them.

Just stick to the comics version. Make him a giant humanoid with a weird helmet. Like huge, mountain sized.
