Well, of course the books (there are three) are obviously biased towards Jester/Jane - there isn't a Gunther character! LOL. (To answer your question: the only characters from the cartoon that are in the original book are the King, Jester & of course Dragon (& her parents). There is a prince, but he's not given a name (& he's a redhead). There are MANY more knights/people & a magician who appears in 2/3 books.)
It's DEFINITELY canon that Jester likes Jane. It's in the books (a quote from the first book "Jane and the Dragon": Jester gives Jane his suit of armor (He dreamed of becoming a knight, but wasn't brave enough) Jane: "But what about your dream?" Jester: "...You dream it for me." & Then at the end, the King throws a party for Jane for saving his son & she chooses Jester to dance with). And from the first episode, it's obvious that Jester likes Jane.
But, I'm always for the dynamic couples and Gunther shows true growth in his personality. In "mismatched", Gunther was HAPPY Jane liked him (until the end when, IMO, Ivon opened Gunther's mind to doubts) & went out of his way (on his own accord - before Dragon pushed him) to be extra nice. There are other less obvious hints (i.e. could be reading too much into it) that Gunther is starting to "LIKE like" Jane.
However, I agree with whomever said Jane seems too busy. Even IF she feels anything for Jester/Gunther, she won't allow it - she refuses to wear a dress because she wants to be taken seriously as a knight & not seen as a "helpless woman". Becoming romantically involved would do the same thing as wearing a dress (remember that this doesn't take place in modern times, so I doubt 'courting' is on equal terms).
I see Jester in the 'best friend' role - she'll tell him she's afraid of the dark because she doesn't feel like she has to prove herself to him. For example: how many girls burp in front of the guy they WANT to date? (not are already dating) Now, how many girls burp in front of their friends? Same thing as guys trying not to admit they're utter pigs until after they start dating a girl. But, if they don't care, they've no need to impress. Jane & Gunther are rivals, so of course they aim to please, but that leaves the small gap of "just friends" and "potentially more".
Short story long - I feel the same way as I STILL do about Avatar: Last Airbender: Aang/Katara and Jane/Jester are the canon couples, but Zuko/Katara and Jane/Gunther are the more realistic (ie: I could see them as a real life couple) & dynamic pairing. They have something to bring to the table. Sorry, but the saying, "Nice guys finish last" is said for a reason. Aang & Jester are the pity dates. Zuko & Gunther is where the real, balanced relationship lies.
But, of course Dragon won't let anyone have more time with Jane than he gets, so I doubt she'd have time to date, what with the training & then Dragon.
