How did Ben Stiller's character change the court date?

Could have made a private call to Shaw's attorney.

He didn't actually change the court date, he only made Shaw and his lawyer THINK that the court date had been changed. Whether this was done with a phone call, or a fake letter was left unclear.

However, any professional lawyer OR FBI agent should have realized that the New York City courts would be closed on Thanksgiving Day.

So it wasn't shown in the movie? I was thinking I had somehow missed a line or scene or something in which they explained this because I was totally confused by the fact that Shaw's lawyer was the one to introduce the earlier court date to the audience.

The judge's clerk called Shaw's lawyer to schedule the court date for Thanksgiving to avoid a media frenzy. Implied is that the "clerk" was actually Josh or one of the other robbers (in the next scene Ben Stiller says "they bought it").
