ok, totally new to this, haven't bought the game yet bu i am going to. i have heard some stuff here and there that the only race you can play is human, is that true? or can you be like a dwarf or elf or whatever? i'm going to get the game anyway, cause i got bored with wow, didn't have the time to invest, so cance;ed my account. any answers would be greatly appreciated.

You can only play as human. Depending on what campaign you buy, you have a choice of different professions (classes), but that's about it.
In GW2 there will be different races.

so will guil wars 2 be a completely different game where i start over? my girlfriend likes her character and doesn't want to change it to continue playing with me when i get part 2 so i can make elves and dwarves and *beep*

Yes and no... It will be a completely new game, and you will have to start over from the beginning. But if you have GW1 (and the expansion, Eye of the North), you can put your achievements into a "hall of monuments" that you supposedly will be able to find in GW2. So while your girlfriend won't have her existing character, she will be able to have some sort of inheritance from that character.
Note however that GW2 hasn't been released yet. It's due for release in next year I think.
