I don't see how the film was too influenced by the films you mentioned.
A ship sinking will no doubt bear a resemblance to any other ship.
Saving Private Ryan was a boys' own adventure film in the end; not surprising with Speilburg at the helm. But I don't see how Yamato resembles this film anymore that it is also a war film and that the main characters are young men, which is pretty common in war films, and completely unavoidable.
And the similarities with Pearl Harbour are also a mystery to me. is this because of the harbour attack scenes? As with my first point, there really aren't so many ways to present an aerial attack on a harbour.
The Japanese flavour was totally present in the film. Having watched hundreds of films and TV dramas that can only be watched in Japan, I can so easily see that Yamato is 100% Japanese flavour.
