In my humble opinion, because Japanese culture is really different and charged with a mystical approach of natural elements and of course our relation to the world through our 5 senses.
For example, in "Dark Water", while Nakata treats the water element with brio Kenji Kawai completes a totally abstract OST. Both ingredients combined result in an intriguing chemistry.
Kioshi Kurosawa did also a great job in movies like "Cure" where water flows also geniusly in it. The character use it to announce a murder.
For example in French horror movies like "high tension", "Martyrs" you'll only see toorents of blood and guts. That's why Japanese horror cinema is so particular because it calls our senses to our natural environnement and not a christic approach of suffering like film makers have in Occident. (SAW, Hostel and all that silly stuff)
