My personal cast & crew picks... (subject to change)
CAST
People will revolt when I say this, but Leonardo DiCaprio would make an excellent adult Link. Everyone just sees him as some pretty-boy, but he is an amazing actor, and can be extremely tough.
A friend of mine for some reason said he would love to see Tom Sizemore try out the role of Ganondorf, which I personally could almost see. Almost, but not quite. I was thinking Gerard Butler (just look at his Wikipedia page, he looks kinda like a sneering Ganondorf), or possibly Ralph Fiennes (I think I misspelled that) as Ganondorf, but who knows.
Zelda... I have almost no clue who could pull off Zelda.
Voice of the Deku Tree... It would need to be someone who could sound like an ages-old spirit. Someone who had power and sympathy. I would say either James Earl Jones (my first choice) or the old VO stand-by Morgan Freeman.
As for crew...
Director of Photography: First choice (and obvious choice)... Guillermo Navarro.
Music: First choice for me... Graeme Revell. (Very close second choice is Marco Beltrami... listen to the "Hellboy" score and try to argue me on that.)
Director: NOT Peter Jackson... Jeez, I would just be mad if he made the "Zelda" films. Of course, like any fanboy, I'd want to write and direct the movies (I'm taking classes in filmmaking at college during this coming school-year, its the field I'm trying to get into at least to some degree), but if I had to choose otherwise... I am choosing not to say my choice for director, as it would be taken severly out of context, and would be highly misinterpreted. (Don't worry, its not Uwe Boll.)
Screen story treatment: Would love to see Miyamoto give a little imput, but otherwise David S. Goyer (his work on "Batman Begins" and "Dark Knight" was phenominal) or David Hayter, as he seems to actually give serious respect to the source material, and did excellent work on the first two "X-Men" films, as well as made "Scorpion King" kinda fun.
Screenplay: Goyer or Hayter added with either Ted Elliot and Terry Rossio (because they add a lot of flavor and solid adventure to their projects), or Michael Dougherty and Dan Harris (whose work I loved in "X2" and "Superman Returns", and could nail a good darker tone.)
And sorry, the storyline would have to be original for the most part for a film to work. None of the specific games have enough "meat" in them to be substancial enough for a general audience. AKA, use the basic premis of the series, with plenty of references to the games, but also have a lot of originality.
