do they ever age?
do they ever age in the series? and what age are they supposed to be?

Technically Yes they do age. They never officially say it but they do
For instance they say he's been on his Journy for 4 years so 4 years have gone by sence 10. An also just recently his voice changed so gettin older there.
Right now Ash is about 14 as is Misty
Brock is prolly round 17 or so maybe
May is prolly around 13
Max eh maybe 9 or 10
