An ignorant question about the language

Maybe displaying my own ignorance here, but how come the film switched between languages so routinely? Most of the dialogue is in 'Chinese' (apparently Cantonese/Mandarin, but I can't tell when they use one rather than another) but frequently they switch into English, either midway through an exchange, or even sometimes midway through a sentence. Is this they way it really is in Hong Kong?

...Never been to Hong Kong myself, but I wouldn't be surprised if there is some English sprinkled in with some of the everyday conversations. Hong Kong used to be British territory up until 1997.
