Do the chefs know about the secret ingredient?

Everything seems to be pre-planned and coregaphed, I don't know the plausibility of a chef coming up with five original recipes in one hour, featuring an obscure main ingredient, without some preplanning?

Each chef is given a list of 5 possible "secret" ingredients, one of which will be chosen for the actual battle. They then have to provide a list of (I believe) 75 items for their "pantry", which does leave some room for necessary spontaneity.

So it's not a complete surprise.

Tom Douglas told us that He was told the secret ingredient would be either a meat, vegtable, or spice. That's all he was told. He said he & his people came up with 5 possible menu's with "cross overs" based on each category being the primary ingredient.

He also said you have a solid hour & alot happens there theat they edit out. 5 cameras shooting 60 min, then they take the breast 40 min & put them together just so.
