i thought it was because bloody bill had finally moved on... of course i only cought the last half hour of the movie so i might be totally off track...

Actually it was 100 when they first got there and counting everyone that died from the point where Earl shot the first guy several times there was 7 people that died. If I'm not mistaken when the movie ends the first 7 they show on the credits are the ones that died and they show them in the order they died too.

if all the zombies die, there's nobody left to change the sign to 0, is there?

every time i saw the sign it frustrated me because logically speaking, if the total goes up when someone becomes a zombie then it should go down when the zombies die.

although i can understand why they didnt do that because then people would probably get confused wondering why it jumped down like 10 then goes up 1.

Before the end of the film, I don't think the zombies CAN die permanently. Look at the scene after the professor and Earl leave the bar, you can see the zombies they thought they killed stumbling out of it. As long as Bill has the town cursed, they can't rest, even if shot to pieces.

Speaking of slight mistakes with the sign, notice that it said 106 when it was down to the main girl and the black girl, even though only five people had died since they'd arrived?
