Why didn't they ride on the grass in Mongolia?

So I started watching LWR again and I couldn't help but notice that when they were in Mongolia riding through the deep sand roads, there was miles of grass on either side of the road. Surely they would have been better off riding half a meter from the road on the grass?

It's like when you're at the beach walking on the sand compared to walking where the dune grass is?
