It'd be a model's from the creative/marketing agency hired to make the poster/one-sheets, maybe design the video covers, etc.

If it doesn't show a face, then it's highly unlikely that it'd be an actual star :)

(I asked a Hollywood film director the same thing about his poster, which had a pair of legs and he told me the answer I just gave you.)
