Deleted Scenes on dvd - why were they cut ??

i think the director(s) / producer(s) make some grevious errors with the scenes that they chopped out of the movie.

the alternate beginning with the gawd-like voiceover of the rabbi was terrific and should have been left in the movie - and to listen to the juvenile reasons of the movie people as to why they cut it out was highly insulting and made us shout at the screen " *beep* you stupid movie people !!! "

there were some other scenes that they deleted that should have been left in the movie.
