Forgot one important detail...
How long are you supposed to marinate before putting in the oven?
shareYou don't really need to marinate it b/c it takes 4 hrs. to cook. It's marinating while it's cooking.
The only thing I'd recommend is letting the dish rest for about 15-20 mins. after taking it out of the oven--let it get all good an pibil-y. And the leftovers kick ASS the next day.

I tend not to agree. If you must rush, then don't let it sit. But marinating serves an important purpose, which is breaking the cell structure of the meats down. The acid does this, and it makes it more tender. The longer you do this, the more tender it becomes.

I always marinate mine for at least 12 hours (24 is better) when I make this. Cooking is like Sex... rushing it doesn't make anybody happy.
