It's called Capoeira, a type of martial arts. You can also see Vincent Cassell practice it in Ocean's 12.

The Capoiera is a african-brazilian dance/martial arts. In one of the last scenes, Christophe, his girlfriend, Olivier, and the father are sitting at the table talking. I think it is Christophe that mentions something about it being a slave's dance (african slaves in brazil), and thus, the basis of the American title: Three Dancing Slaves. Of course, there is more metaphorical context to them being dancing slaves.
