Question about the show

I saw the end of a rerun the other day and I was wondering what had happened? Rocco was made at 3 people, 2 guys and a girl, about lying about a hospital visit? Just wondering if anyone could clear this up for me? Thanks!

The three, Tim, Diana, and Rory, were experienced line cooks who had been hired to keep the kitchen running smoothly. One night, they went to a bar and Tim, the tall one, got into a fight and was knocked out. When he came to, they went to a hospital emergency room where he was pronounced OK. Diana went tearfully back to the restaurant to explain what had happened. She was told to go home and take the day off. Tim and Rory never went back to Rocco's. Rocco called the hospital, thinking that they were still there. The hospital said that they had no record of their having checked in.
Shortly thereafter, the three cooks are seen in a bar discussing the night's events. Diana is surprised to hear that Tim and Rory have decided to quit because they weren't learning anything from Rocco who was always in the dining room and never in the kitchen, and besides, the food they were preparing was inferior, also, they hadn't been paid in three weeks and unlike the waitstaff, cooks don't get tips. The guys convince Diana to quit too.
In the morning, Tim, Diana, and Rory go to Rocco's to say good-bye and pick up their equipment. Rocco accuses them of lying to him and tells them to stay out of his restaurant. They don't know what to make of this, but leave without arguing.

My impression from watching it was that although there was a fight and he got hurt a little, the three of them decided that they just didn't really want to go to work the next day, so they made it seem as if he was hurt badly and the other two needed to be by his side at the hospital. What was really inexcusable about the whole thing was that Mama was truly upset when she heard and she was crying.

What really set Rocco off was when he talked to them about it the first time, they made off-hand remarks about how they weren't really doing what they wanted to do at Rocco's because the food was inferior or something to that effect. It was after Rocco gave this some thought and it made him madder and madder the more he thought about it that he decided to confront them about their lies.

The reason Tim, Rory and Diana signed to do the show was not only to get publicity, but also to get experience and improve their cooking skills working under Rocco. In this they were disappointed as Rocco was seldom in the kitchen and their own appearances in the show were quite limited compared to the front of house staff. Also, many of the recipes were not "Mama's" originally, but had to be pulled from memory by the cooks.
They also hadn't been paid for three weeks, which is inexcusable in any occupation, but acceptable for some reason in the restaurant business. Anthony Bourdain later said that anyone failing to pay their staff deserved a boot in the ass, which probably led to his derogatory remarks about Rocco in his "No Reservations" series.
