It's my belief that the moment when Evelyn plants one on John, she's letting him know she really loves him no matter what.
The scene is prefaced by Evelyn choosing to leave so that Flor and John can be alone. She calls John a "poor thing" knowing he's being cheated on. Her kiss on his forehead and then the lips, followed by her dialogue with Flor about "loving everyone" and "that's what is killing her" indicates that she is very aware of the interpersonal dynamics of the household, despite her inclination to the occasional cocktail. She's comforting him and also showing unconditional affection. It basically permission for the two main characters, and the audience, to engage in the upcoming scene on the beach.
Her wobble and "no one noticed a thing" seems to be a comical auditory addition to a little physical comedy, but if you wanted to get really deep, you could postulate that the comment is about some of the aloofness to the different relationships going on between everyone in the Summer home.
