He was good with electricals which was shown at the beginning. maybe he had hidden talent while watching and learning from his bigger brother. He did say to Jess "My hands feel different" so maybe he wasn't as good as Ryan but still capable and he did recently come out of a coma so that could also explain his lack of perfect artist handle that Ryan had. lol The reason I think that is because my Grandmother is an excellent dressmaker. She never trained me but I grow up watching and copying her. Now I make my own clothes.
Dogs sense changes in people but can still be trained if you win their trust. I'd image Roman was never nice or gentle with Norman but while Jess was at work, he worked on winning Norman's trust with a gentler approach. Even a nicer tone of voice with treats would have made a start.
The lucky coin thing. Jess did say she caught Roman in their room so he did route around their stuff and did watch them kissing so maybe he watched them having sex. He loved her from the beginning [an I wish they had shown a brief flashback of that court case she mentioned or there first meeting] so maybe he was trying to learn what she likes so he could change enough for her to at least like him.

Yup. It's hard to see unless you're watching a big screen, but Roman can be seen watching them from his window when they have lucky coin sex in the workshop.
