If the ghost in the kitchen was supposedly Su-yeon, then why did she look considerably younger and have longer hair and a brighter green dress? Aren't ghosts supposed to look the same way as the person they died as? I don't recall Su-yeon's dress being that brightly green when she died.

I don't accept that what we saw was a ghost.
Having said that, when Eun-Joo discovered Su-Yeon beneath the fallen wardrobe, she accidentally knocked a framed photograph onto the floor. It was a photograph of a younger Su-Yeon in a dress that looks very similar to that seen when Mi-Hee is having her seizure. Mi-Hee is a friend of the family and quite possibly remembers Su-Yeon wearing that dress in happier times. Those memories are now being corrupted and thrown back at her as a form of guilt fuelled self punishment/torture for what she sees as her part in Su-Yeon's death ... IMHO.
