It was a cutie, but what was the breed of dog - Australian Cattle dog, some other breed or mongrel?

He looks similar to an Australian Cattle Dog.

the dog was half blind. watch the making of. the director states the dog was blind. even Mort in the movie calls him blind

I wondered that, too.

I'm not even a dog person - probably would never have one. But this one was cute and well trained.

I checked https://www.lingerandlook.com/Names/DogsInMovies.php which has a TON of movie dogs' names and their breeds. It said he's an Australian Cattle Dog. Looking at Chico, though, he's perhaps a mix.

I reckon on it being of no definite breed. Whatever it's mixed parentage it certainly is cute.

The dog had glaucoma and was very old with lots of gray fur. Chico was a cutie though. At some point, they may have used the TV theme song from Chico and The Man because it is credited in the music credits. I don’t recall that theme so I wouldn’t have recognized it though.
