Druid, but I tend to mix up my characters with other base classes or prestige classes for added fun.
Rogue level x / Shadowdancer level 1, that you get sneak attack damage every time you strike after hitting an opponent from the shadows. Only to disappear in front of the enemy to strike again. Use a cleric to back you up when going toe to toe against the undead.
Druid level x / Monk level 1, the druid is the best class because he has some pretty nifty defensive spells (and some OK offensive ones), not only that but a flexible fighter too at the higher levels when he could shift into an elemental. That bear companion is near indestructible too, at any level his usefulness is never obsolete. That one level in monk gives the druid added unarmed combat bonuses as well as use his wisdom modifier to armour (awesome when *beep*
The shapeshifter only has a few useful shapes towards the end, cannot add anything spell wise, is useless in the first few levels and animal companion does not level up with the shifter. Anyone agrees with me on this rubbish sub-class?
Sorcerer level x / Paladin level 1, alright you are beginning to form a pattern, I frontload. So sue me. A sorcerer knowing Time Stop can never be beaten, just cast it before the end to every round and you could empty your entire spell inventory without getting hit back. I normally consider this exploitive to the point of cheating, but still awesome. The level in paladin is obvious.
I used to like monks, but I found their fighting capabilities to be too limited and no matter how good a monk build I use, I keep thinking he is missing out on something. To switch to a greatsword over their natural weapons is a very bad idea, given their highly limited "to hit" rolls and weakish strength, their attacking capabilities lies in number of hits, not how powerful they are.
