I Played It All The Way Through On Normal Difficulty EXCEPT...

... I had to switch it to 'Easy' for the final battle with Darth Malak. By that point I had used up all my advanced medpacs and life support kits, and it seems to me it's impossible to beat him on 'Normal' difficulty without them. So often when you do a lightsaber attack on Malak it comes up as a miss! I would have liked to have completed the whole thing on 'Normal'. Very annoying.

It depends on your tactics; sometimes I run around planting mines everywhere when he's busy recharging. A good way of boosting health is to heal yourself in your menu screen instead of selecting it during combat.

If you have adrenal stimulants or advanced adrenal stimulants, use them. Look at the bonuses they give. You can use the adrenal strength, adrenal alacrity and adrenal stamina. They'll help you connect your lightsaber to Malak's skull.

A "properly" built character can beat easily Malak in the final battle on "Hard" fair and square. If you have the Drain Life/Death Field you can also recharge on the captured Jedi like Malak does.

or destroy the tanks with saber throw.

Or... you could do that cheat that turns Malak into a Twi'lek dancing girl instead.

I always sell everything and have hundred of med packs and I always use lightsaber throw to take the tanks out. Malak is still hard though- critical hits and then you get all stunned.

There are ways around getting stunned. Either be a Sentinel Jedi, or use a mind protecting gizmo, like the green belt, or the fancy head gear that covers your face. Or just invest in a type 2 implant.
