This is the first Bollywood movie I've watched. Do most Indians speak in this mixture of Hindi and English? Or just the ones living in the U.S.? I know most bilingual speakers do that, but the people in this movie seem to switch between Hindi and English at the weirdest junctures in their sentences...

Yes, this is true especially for well educated Indians. They frequently use lots of English words/sentences in daily life. But their mind doesn't go 'ok, let me switch to this foreign language now'. It happens automatically and it is quite common.

Based on my experience working with Indians at the office, it's actually quite common for them to talk in Hinglish (mixture of Hindi and English) with each other. The educated areas in India also converse like this, so you'll see many Indian movies showing it.
