Well, I've heard once you've shot 4 of them you'll play as Snake. I'm trying that now, apparently it only works on Extreme and I accidentally went on to E Extreme.

They serve absolutly no purpose whatsoever, other than to give the game a little something else to do. If you like, I believe there is a total of 15 of those statues hidden throughout the game, and you can try and find them. They offer no special items or any new playability other than their little game of hide and seek.

Similarly, Metal Gear SOlid 3: Snake Eater has little frog statues that serve the same purpose. Although you can interact with them a little like you can the Vulcan Raven figure in MGS2. If you shoot the frog statues, they will turn 90 degrees and start making sort of a "ribbit" noise. You can shoot it 4 times to make it turn completly around.

If you shoot all 64 frogs you unlock stealth.

in Snake Eater not getting any alerts will get you the stealth.
shooting the frogs get you the unlimites tranq gun from the monkey mini game.
