I want to start watching Hellsing, and I was wondering, should I go with Hellsing or Ultimate? Or do they complement each other so I should watch both?
Without spoiling, please explain why one or the other is a better choice for me. Also, I want to watch this partly because of the violence - which of the two is more graphic?
Both complement each other. I suggest watching the original series first.
Ultimate has much better animation and is more faithful to the comics.
Seras Victoria looks a lot cuter in the original.
Ultimate is more graphic.

Both are graphic. However, I would start with the original to get a base to go by when you move on to the OVAs. You should always start the an original. :)

Skip original, watch only Ultimate
Original is pretty and fun but also very shallow compared to Ultimate
I didn't find it shallow.
shareHellsing is basically just fighting. And that's ok, afterwards I watched DMC which was almost the same and I enjoyed it too. But Hellsing Ultimate offers us much more than that: there's a lot of philosophy, some really good and smart lines, interesting plots, mature themes etc. It's still a far cry from for example Ghost in the shell, buts till a step up in my point of view.
Hellsing: 6/10
Hellsing Ultimate: 7/10
I only watched two episodes of the OVA at an anime club meeting and I just wasn't engaged with it like I was with the TV series. Does it just start off slow then get better?

I'm confused by the term "series" when reading up on this. I watched the 1st series where it ends with Arucard impaling what's-his-face. Is the end of that series where Hellsing Ultimate begins?

No, Hellsing Ultimate isn't a sequel. It's just a newer, flashier version but it follows the storyline of the original manga.
In the Ultimate version, it starts out pretty much the same as the original, but at a much quicker pace. The first OVA covers three storylines super quickly for example.
After the Valentine brothers massacre, the Ultimate series stays faithful to the manga, while the TV series went off on its own storyline.
