i have to admit that I'd be panicking too if the dinner plans were changed to include four more with less than an hour notice. I want to know what her answer was!

Perhaps the answer was to make everybody's portions smaller and whip up another side dish (something fast) so that everybody's plates wouldn't look sparse. Of course that would only work if the main dish was a casserole or meatloaf or something that you could portion out yourself (i.e., if you were serving steak it might look obvious if you try to cut those in half).

A second solution would be to always make more than enough food (assume some people will want seconds) when company is coming. If the food is not eaten that evening, you can use the leftovers later on.

A third and less desirable solution would be to tell your husband he needs to go to the store on the way home for whatever you need to make enough food for the extra people, an stall the dinner by serving hors d'oeuvres and coffee.

Another option would be to cut up the meat entrée and add make it into another more fungible dish; i.e., a stew, a casserole; or serving it with gravy over potatoes and noodles.

I have another suggestion:

Tell your husband to stop being an "inconsiderate selfish ponce" and don't increase invitations to 4 only an hour ahead. Give at least a day notice. I told my boss that one time, when he rescheduled a meeting from 2pm to 11am (lunch): "Please give me more than four hours notice."

He said, "Sorry I cannot do that." And I replied, "Well I'm sorry too because I already spent $50 on a restaurant ticket, and I cannot afford to throwaway 50 dollars, so I will not be at your meeting."

Later on I divorced my boss.
In other words I quit!
I have no room in my life for inconsiderate holes (including husbands)

The test was the boss seeing what kind of marriage his employee had. Was he happy? Was it a partnership? Were they creating a mature and sustainable household? All of this would be a part of the employee’s work life. A man with a stable house would be stronger and more reliable.
