"Pretty Dirty Thing"s - Absolutely the best ending. Rent it if you haven't seen it.
"Dark Matter" - Pretty shocking ending

Les Diaboliques - scary and powerful
Usual Suspects - just the way he's flaunting that he'll never be captured
Primal Fear - to see how shaken Richard Gere's hotshot lawyer was

These three movies I would classify as having a twist ending. Although "He Loves Me..." does have a good twist ending, the major twist comes about 1/3 of the way through, when you find out the truth about Angelique. This is similar to the excellent movie "In the Bedroom", which has a dramatic twist at the 1/3 point, and it's almost as if a new movie has started.

Thanks for ruining those films for people who haven't seen them yet.

I would add:
6. Primal Fear-Ed Norton's character
7. Usual suspects - Keving Spacey (you have to watch the beginning again after the movie ends to get it)
8. Hide and seek-Robert de Niro (not good film, but I thought the twist was interesting)
9. Tell no one - french film with K Scott Thomas
