Is that a Pontiac?? (The one that the two guys drive to Vegas)
What is the Make and Model ?

1970/71 Pontiac GTO convertible, pretty sweet car, too bad the one they had was a junker. I still want to know the name of the song that played at the intro and final scenes.

I would have to disagree with Bruno.

The Goat was based on the mid-sized Tempest chassis which was superceeded by the Grand Am.
In fact, before it's (first) demise, the GTO had become simply a sporty trim option available in the Grand Am series.

I do agree with the vintage, but I would expand that a little, say, late 60's/early 70's (leaning more to early 70's).

There's also the fact that you can see a rather long name printed on the passenger side rear fender in one of the shots.
Plus, the overhang and front end treatment screams full-size Poncho of that era, not mid-size.

It's either a Bonneville or a Catalina convertable.
Which one would depend on trim options (the Bonnie being the "deluxe" version).

Sorry Bruno, I can't recall the song.
I'll rent the movie again and if I can find out, I'll post a reply.

It's a 1967 full-size Pontiac, either a Catalina or a Bonneville. The latter has a longer wheelbase and a little different trim but it's hard to tell here.

And what about Woody Harrelson's character, who's got some weird-looking car ?

No-one cares, but the motorbike is a Honda CB 250 or 400 (Both are almost identical) Twin engine from the seventies ! :)

Woody's car is a GM EV-1 electric car I think.

Absolutely correct.
I believe the EV-1 holds the distinction of being the first full electric car ever produced (for the general public) from any major car manufacturer.
Although strange looking, the body shape was designed in a wind tunnel and only produced about 1/2 the amount of drag that an average car of that time produced.

Totally wrong, Blake.
Actually, rubenyc and Phroggy got it right.
According to the IMCDB, It's a '67 Bonneville and a '78 CB250T.
