I saw the rated R version, what is added in the uncut version?
and does it expand the understanding of the film at all?

The uncut version is shorter and isn't much different. The pacing seems tighter but some of the anime and CGI sex scenes have been extended.
EDIT - imdb says the director's cut is 9 minutes shorter; the result of seconds being trimmed off lots of different scenes to make it a bit tighter. So aside from the computer generated sex scenes, there's not much difference in the content.
