i have the scorpion king like a dozen time and never caught this. at the end of the movie can the woman still see the future or not.

Yes, she can.

She is basically, in a PG-13 way, saying that sex does not remove her powers (that is what the legends say) - that was made up to stop the kings from 'taking advantage' of their sourceresses.
