Why was the black guy eating everything?

Short answer: David Zucker.

Long answer: In my opinion, there are two main types of humor. The first highlights and comments on aspects of life (examples are Jerry Seinfeld's routine and satire); the second consists of absurdities, things that are just so off-kilter and strange they're inherently funny (similar to a lot of Kids in the Hall and The Whitest Kids You Know). This was the second type, and is one of the hallmarks of Zucker's type of humor. Personally, I found the whole bit hilarious and think this movie's underrated.
