Why is he called slops?
I saw the little extra bit where it was explained but for some reason I just don't understand it. Will someone please explain it to me?

I think it's the spillages from draught beer poured from the beer taps behind the bar. The spillages are collected in a tray, and should be poured down the drain when full.
With this in mind, I believe Gregg Thompson calls The Gov, "Slops" as a derogatory put-down; that he sees the Gov as nothing but stale, useless beer.
"...but what I know about is Texas, an' down here... you're on your own."
Didn't he get caught drinking from the slops tray at the bar steward school in a flashback?
Must rewatch the dvds
Some unscrupulous publicans of the past poured the slops back into the keg.
