1. A few new classes
Shapeshifter: can become a skeleton, thrasher, flayer, devilkin, a couple of other monsters
-receives the skills of that monster, is not attacked on sight when in shapeshifted form, can charm monsters
Shaman: has the following skill trees: Sacrifices, spirit dances, astral contacts
Psion: the following trees: Psychometabolism, Clairsentience, Mind battling
Conjurer: the following trees: Summoning (creatures), Invocation (spirits), transferrence
Vampire
2. I think that classes should be able to "specialize", perhaps at level 30. For example, a paladin can become a crusader, a priest, or a knight. When you specialize, you receive a new skill tree in addition to the (three?) main ones for your class. There would be "priest-only" items and such. One thing i didnt like about Diablo 2 is that there are no new skills after level 30. This would keep things fresh.
3. More than 1 "uberquest". Like the mod Median 2008 (thanks Brother Laz!)
