You have to confuse the cashier girl with the change and the talking, like a magician does, and pay her with her own money. Few people will fall in this trick, so the ability of the thieve is the most important.

Yep. They used the same trick in Paper Moon, another con movie.

What I don't get is with the one with the elevater. Was he just literally betting the woman to just give her purse to him or did he actually walk away with money? I thought that it was pretty useless if he didn't walk away with anything.

He didn't keep the purse, it was just to prove to Marcos that he could do it. They also bet the ring, which "Juan" got to keep after successfully taking the purse from the woman.
