I remember in some episodes where Plastic Man was shown with a girlfriend, and she also had the ability to stretch and change shape.

Actually Plastic Man's girlfriend was Penny who would later become his wife. I don't believe she had the ability to stretch like Plastic Man but they did have a son who had Plastic Man's abilities.
