How can Ryo just hop on a ship and sail to Hong Kong? Doesn't he have to have some type of documentation like immigration records or anything like that? We never see it in the game...maybe he got a visa?

I'm sure there is a lot scenes cut from the game, to keep the pacing. Not only that, but a lot of stuff happens off screen as well. Like how Ryo got his ticket off Chen, how Guizhang persuaded his father etc.
