Were the head chef and the gambler both Cropa's sons? I got the feeling they were. The gambler clearly was a son, but I didn't think the head chef was until Cropa tells him he's giving him the restaurant and the "son" says "I wish Mama was here" or"I wish Mama could see this."

IIRC, only Udo was Louis' son. Duncan (the gambler) was not, but Udo couldn't fire him because only Duncan could make Louis' favorite pepper dish. Louis didn't like the food Udo made, even though that was what was bringing the customers in.
