I've been looking for that song too. I understand that one of Irwin's standing orders was to "keep it (the camera) rolling" and that's what they used to base the song.
The sequence that I can recall from one of the Crocodile Hunter specials shows him running, getting bit and falling - certainly situations where you might be tempted to cut the film.
Anyway, hopefully one of us will find it and post a link here.

I found the theme that you are looking for in my video archives...it was shown on an NBC special about Steve. There may have been other shows that had this same song but this is the one that I recall.
