When Cate Blanchett is introduced she's just spent the day preparing a gourmet dinner for her husband
of cream and sorrel soup, and quail with ?????? It sounded like "miracoil".

What is the ingredient?

Damn - I was going to say saffron but that was the mystery ingredient that Billy Bob Thornton guessed at their first sleepover meal (by the way, weren't the two Bruce Willis real-life daughters great in that scene).

I just watched it again and missed the first meal Kate cooked.

Mirepoix (pronounced meer-PWAH) is a combination of onions, carrots, and celery (either common pascal celery or celeriac). Mirepoix, either raw, roasted or sautéed with butter, is the flavor base for a wide number of dishes, such as stocks, soups, stews and sauces. The three ingredients are commonly referred to as aromatics.

Check wikepedia for more. It often has a meat or bone stock and wine added. There are also similar dishes in other cultures with slightly different ingredients.

In the movie we saw her chopping up the veggies.
