Paralyzed

Why was Mason paralyzed? I know about his face, but I don't recall it being mentioned in the movie about his paralysis.

It's not mentioned, and it certainly wasn't because of what Hannibal made him do.

Also very inconsistent, in one scene Codel is having to put a straw in his mouth and hold the cup so he can drink, then later we see him outside holding the drink himself.

Found this online:

Dr. Lecter gave him some "poppers", which were a mix of hallucigenic drugs, and persuaded him to cut his face off and feed the flesh to his dogs. Then, appealing to Mason's auto-erotic asphyxiation tendencies, he put him in a hangman's noose, which broke his neck, paralyzing him.

Wait a minute... who am I here?

That's a good conclusion but it's not in the movie.

Thanks for everybody's input

We see Mason hanging from a noose (as part of an auto-erotic asphyxiation "game") in the scene where he's drugged up and cuts his face off. Presumably he lost control of the noose and accidentally broke his own neck, or Lecter pulled on the noose and snapped it for him.
