Don't forget that's the writers.. usually adults trying to write a rebellious teenager. And later in season 2 she really softens a bit. There is an episode with her and an elderly woman who is just as snarky as Caitlin, they bond and its kind if cool.

i know...like one time griffen was really excited and was walking to caitlin who was in the stable with bandit and an injured goose, and he was talking really loud, and she just snapped at him really meanly and said "the goose is trying to rest!" or something like that...i was just like damn, calm down...

I guess we got the same dreams...or is it the same nightmares?
