'Building the Great Cathedrals' question

The group of people in the little town southeast of Paris, who are building an authentic medieval castle using period tools and techniques, what's the name of the castle? I only caught it once but I have no idea how to spell it. Anyone know?

Why are these people constructing arches with lots of grout between the stones? That's not how you build stone arches!
