Here are my pairings:
Ed/May
Like you, I think they should be together. I can see Ed gradually warming up to her, becoming friends with her, then dating her. He's the only Ed I ship with a Kanker. May is the nicest out of the sisters and she's dimwitted like him.
Edd/Sarah
I think these two belong together. Edd had a crush on her in the first episode (which was sadly dropped), then she developed a crush on him, which was shown as late as "May I Have This Ed?" It's also implied he (still) likes her back, as shown in "Tight End Ed" and a little in "High Heeled Ed". Even Ed seems to ship them as shown in "For Your Ed Only" (although he also kind of shipped Eddy/Sarah in the aforementioned episode, "High Heeled Ed"). Plus, Edd and Sarah were shown talking to each other at the end of the movie a couple of seconds before Jonny shows up and it KIND OF looked like they might have been holding hands. So I think they should be an item.
Eddy/Nazz
Again, I think these two should be a couple. Kevin cares more about his bike than he does about her, as shown in the movie (foreshadowed in "Boys Will Be Eds"). Plus, Eddy has always liked her and she kissed him (on the cheek) at the end of the movie.
Kevin/Marie
I just recently started thinking about this pairing. They both seem to have mechanical skills and they're athletic and/or tough. Plus, they're voiced by the same person so it would be kind of amusing to hear the voice actress (Kathleen Barr) talk to herself.
If Rolf were ever to get a girlfriend, it would be very likely someone/an immigrant from his homeland since he doesn't seem to care for North American girls like Nazz.
I have NEVER understood the appeal of yaoi or slash, unless it's canon. Most of the time, I support canon couples, even if they're same-sex. I also support couples that I think could be canon or if they're hinted or going in that direction. So Edd/Kevin and all of the other fanon gay couples don't make sense to me. Also, some people ship Edd/Nazz, but I think she's too much of a ditz for him, honestly. As for Edd/Marie, I know they were together in the original series finale, but I think (and hope) that was just a joke. After all, it was a deleted scene AND a dream (Eddy wakes up as a kid again and then once more as an old man, the Kankers aren't shown after he wakes up both times). I really don't think Marie is Edd's type. Sure she might be cute, but she's tough and dirty (specifically her teeth) - and he's the nicest and most hygienic character on the show. I don't think it would work.
So those are my thoughts.

I don't really know about Double D and Sarah. Sure, there are hints that he liked her or that she liked him. But it seems like they never liked each other at the same time. Then again, who knows about what happens in the future?
And if Marie would tone down her mean streak and cleaned herself up, or if Double D became a bit less obsessed with cleanliness... Yet again, who knows? Even with all her flaws, Marie is the one I want Double D to end up with.

I don't know. Those traits make them who they are. I still couldn't see them together. Just my opinion.
