in Episode S14:E2 Stevie finds out hes going to become short as an adult.

yet didn't he find a future version of himself that is tall? woulndt this contradict what the doctor initially said about his adult height?

Dr. Hartman misread Stewie's results so he was never going to be only 5'1", so all the future versions of Stewie [teenager & adult] are correct height wise.
Something else to consider, Stewie erased the 'Stu' future when he stopped the lifeguard tower from falling on him, he may have very well changed how he will physically appear in the future as well. He might actively prevent changing into a bald 35-year old Parade magazine reading virgin.

Can he still read Parade?

I understood the doc misread his results but is figured the future Stewie would have made him know he wasn't going to be short.

And Him preventing what he did wouldn't make his new future self change height. It would just not make him the weirdo he was

Except Stewie never met Stu so he has no clue what he's going to look like at 35, besides, he invented something that impregnated him with Brian's "puppies", I'm sure he can invent something that could alter his height or general appearance if need be.
